Providence Hosts Aquarium of the Pacific Dinner: Eat Fish at Michael Cimarusti's Restaurant + Watch Them for Free With an Aquarium Pass

Providence, chef-owner Michael Cimarusti's Michelin-starred seafood restaurant on Melrose, is hosting a dinner in partnership with the Aquarium of the Pacific on November 18th. Edible Los Angeles will also be celebrating their fall issue at the event; diners will receive copies of that issue, as well as one free pass to the Aquarium. So you can watch your fish, I suppose, as well as eat them.

On the menu: Kona kanpachi tartare with American caviar and wasabi crème fraîche; wild King salmon with Matsutake mushrooms, green onions and lime; and wild local swordfish with buckwheat, truffle fondue, Tahitian squash and roasted Bermuda onions. Plus dessert from pastry chef Adrian Vasquez. Cimarusti is doing the dinner to draw attention to the Aquarium's new Seafood for the Future program, and will have representatives from the Aquarium (Aquarium project manager Andrew Gruel and marine biologist Dave Anderson, who is in charge of the program) at the dinner to talk to the guests. The cost is $95 per person, with wine pairings for an additional $35. Needless to say, everything served, including the wines, will be sustainable. No shark fin soup for you, and certainly not in Cimarusti's house.
