For Those Still Sitting Shiva for Algabar, We Present T-Salon

Miriam Novalle, owner of T-Salon in New York, tells it like this: when she decided that she wanted to go into the tea business 22 years ago, her mother looked at her dubiously. "Well," she said in a very New York Jewish accent, "are you at least gonna give them a cookie?" Thus, when Novalle opened the newest incarnation of T-Salon on Melrose last Saturday, there were cookies. And sandwiches. Farm to table soups, salads, pastry, and granola.

But Novalle keeps the salon's focus on tea and sustainability. Its eco resin shelves are filled with over 300 loose leaf teas, and 20 iced teas flow from the tap of its shiny fountain. They have an impressive tea of the month club which ships in recycled packaging that is printed with vegetable ink, and most of the food on the menu lists tea among the ingredients. Here, even the lighting is made from recycled tea bags.
