Waterloo & City Gastropub Opens Tonight in Culver City

Although it's not officially opening until tomorrow, the new Culver City gastropub Waterloo & City will start serving tonight. So if you're over on that side of town this evening and need a pint and a plate of Manchester quail with chopped liver on toast, or whole roast chicken with wild mushroom pot pie, you might drop by. Chef-owner Brendan Collins (Anisette Brasserie, Melisse) and partner Carlos Tomazos (Per Se, Le Bernardin), who met while both worked at Palihouse, are open for dinner this week, with brunch a few weeks down the line. "Everything's good," said Collins this morning. "Swing by."

Collins and Tomazos named the restaurant for the London Underground station line where Collins, who is from the north of England, spent much of his traveling time. The gastropub is in the former location of the old Crest House, which has been completely reworked by local designers Thoreen&Ritter. Look for a deli café in the future, and maybe a butcher's shop. And in a part of town which often shuts down after 10 p.m., the bar will be open until midnight during the week, and 2 a.m. on the weekends. As the sign says...
