Chaya Brasserie Beverly Hills to Close, Reopen with New Chef + New Menu

Head chef Harutaka Kishi of Gordon Ramsay's London in West Hollywood has a new gig: executive chef of Chaya Brasserie in Beverly Hills, where he's shutting down the restaurant while he overhauls the menu.

The Beverly Hills outpost of the constantly expanding and shrinking chain will close for a week (from November 22nd to 28th) as Kishi and executive corporate chef Shigefumi Tachibe redo the menu. No word on which specific dishes are staying or going when Chaya reopens on November 29th, but word is Kishi plans a complete overhaul while sticking to the French-Japanese theme.

Sound like a paradox? You can get a preview of Kishi's plans for Chaya, when he takes over the stoves at Test Kitchen next Monday and Tuesday, November 15th-16th. The five-course meal veers from apple onion velouté to foie gras ravioli pot roast made with wagyu beef cheeks. If that's any hint for Chaya, it also sounds like there will be a dose of upscale American comfort food. Cocktails by Jason Bran of The Roger Room.
