Grindhaus Sausage Shop & Food Truck to Open in Hollywood

The quartet of owners, two chefs and two restaurant managers from Philadelphia, also plan to roll out the Grindhaus Sausage Truck (@grindhausLA) within the next two weeks.

Both ventures will offer house-made sausages including standards like bratwurst, bockwurst, spicy Italian and lamb merguez alongside more gamey concoctions: rabbit, duck with dried cherries and a bratwurst variation made with wild boar. Co-owner Thomas Lambiase says they're also developing a burger-style Greek sausage of lamb and Kalamata olives encased in caul fat.

At the market, sausages will sell for $4.99-$9.99/pound. On the truck, the grilled versions in a bun and maybe with a side will sell for $5-8, though they're still working out the pricing.

Grindhaus will also sell pantry items like duck fat, cured pancetta, spice rubs, mustards, sauerkraut and pickled items. Labiase says they toyed with the idea of making the brick-and-mortar venue a full butcher shop but decided to stick to sausages. They will, however, find and prepare custom meats for clients who want a specialty cut. Now, that's a very different Hollywood meat market.
