True Food Kitchen to Open in Santa Monica Place

True Food Kitchen, a mini-chain of eateries backed by author, integrative medicine proponent and beard advocate Dr. Andrew Weil, will open its first Los Angeles location on May 9th at Santa Monica Place. Like the other locations (Phoenix and Scottsdale, Ariz. and Newport Beach, Calif.), the Santa Monica restaurant will offer a healthyish menu for those with all manner of food intolerances and dietary restrictions: vegetarian, vegan, gluten-free, dairy-free and more. (There are more? Of course there are.)

The chef is Michael Stebner. The menu follows a basic format with location-specific additions. Look for spaghetti squash casserole, anasazi bean and tomatillo salsa, soy chorizo, wild ahi sliders, biodynamic wines and a full cocktail bar.

The design, which is done by Testani Design Group, will be airy with lemon yellow accents and a large open patio. It will seat 90 people in the main area and another 26 in the bar. It's also supposed to be environmentally friendly with high-efficiency kitchen equipment, LED lighting and compostable takeout containers.
