Bacon on your okonomiyaki? Now, it can be done. This weekend, the Glowfish Truck (@glowfishtruck), which had done a couple test runs last week, officially rolled out, sporting a Japanese menu engineered to suit street food tastes. Katsu, teppanyaki and okonomiyaki, large thick pancakes made of cabbage, yam and whatever else. (It's a perfect "clean out the refrigerator" dish.) They're drizzled with mayo and a sweet-tart Worcestershire-based sauce then loaded with your choice of toppings, ranging from the thoroughly Japanese (bonito flake and mochi) to the resoundingly American (bacon) to the bafflingly Mexi-Vegan (soy chorizo). The maximalist's okonomiyaki has arrived, and it's good.
