Eva has two seatings as well, and after chef Mark Gold's recent stint at Noma we can't wait to see what comes out of the kitchen. The earlier $69, four-course menu includes Japanese kampachi, charred cucumber and "whipped" tofu; John Dory, peas and almond brown butter; or Wagyu beef, charred onion and sauce Bordelaise.
