The Cult of In-N-Out

Double cheeseburger and fries at In-N-Out
For omnivores, In-N-Out is arguably one of the most beloved Los Angeles food institutions. There is no shortage of requests -- national and international -- for the homegrown chain to expand outside of its immediate distribution hubs here in Southern California and, in 2011 Texas. A woman even cried at the grand opening of one in the surburbs of Dallas.

But is it all that it's lauded to be? Or is it as Matt Duckor of Bon Appétit believes just a product of "a cult that happens to serve burgers and fries"? Having moved away from Southern California, the assistant editor revisited In-N-Out on a recent trip back and found his burger to be a paler shade of his favorable memory:

That special sauce? It's just thousand island dressing. The meat may not be frozen, but that doesn't mean the beef has much flavor. The lettuce should have been crisp and chilled, not limp and room temperature. The tomato should have tasted like a tomato.

Not every element of his combo meal was disappointing. He enjoyed the consistency of his milkshake; the fries hit a balance of starchiness and "potato-ness." Still the ex-Angeleno thinks that Shake Shack in New York City is "better than In-N-Out in every way, except for the fries."

Does Duckor have a point? Is it really one of the better burgers in the Southland or are we just too engrossed to recognize otherwise?

We have In-N-Out in Phoenix! Their burgers are great, but their fries < mcdonalds.

It really does depend where you go.  I've got one place I go to only: LAX In-N-Out.

I was going to say the real cult is the people who like Tommy's burgers, but I see the acolytes have already proven the point here.  Is In and Out overrated?  You damn betcha, but it's not nearly as divisive as the 'love it or (predominantly) hate it" Tommy's.

I'd rather have an Original Tommy's Chili Cheese Dog with Extra Chili. So I'm biased. I did hit In 'n Out on Sunset last fall, after not having an In 'n Out double double in years, and it just wasn't IT.

In N Out is overrated.... the burger itself is paper thin and tasteless, the sandwich gets it's bulk from the lettuce...hell, the tomato slices are often thicker than the meat.... The worst sandwich ever is probably In N Out's grilled cheese.....basically a cheeseburger without the burger....

I agree with Duckor, In N Out is tasteless...it needs salt or something.  My husband loves the place, says it's the best burger around...whatever, to each is own....

bring on the CAPS LOCK. IN N OUT IS THEE BEES-KNEES! quality you can taste! and maybe the store you visited was having a rough day or night but the produce is ON POINT!! THE MEAT IS 100% BEEF! In-N-Out makes a good fast food burger at a fast food price. It's not so much "great burger" as it is about a distinctive burger. The burgers are cooked and prepared so that the patty, cheese and bun are an amalgam. In a blind taste test just about anyone with any kind of taste buds would be able to distinguish an In-N-Out burger from any other burger. So, it's a combination of several things that drive the cultish following.

In-N-Out is awesome in its universe of fast food burgers. Maybe not so much in "Matt Duckor of Bon Appétit's gourmet world of hamburgers". Go force feed a duck Matt!

It is great for the price, quite consistent and the staff is so well trained but not anything special. For a chain burger joint I would say that Five Guys blows it away. They just build a more favorable product including their tasty fries.

What we all have to remember is that In N Out is FAST FOOD!  Is it better than every other fast food burger I have ever tried?  Yes!  Is it going to stand up to burgers that are prepared with higher quality ingredients to far fewer customers with a higher price point?  Probably not.  

I used to live in NYC and what I still do not get is the whole Shake Shack comparison.  Anyone who has ever withstood the line in MSP on a bad day gets that its not fast food.  A double shack burger is close to 3x the price as a double double!

Blasphemy. Durock has obviously never had Double Double with extra cheese, whole grilled onion, and hot yellow peppers on the side. One bite of the hot pepper before biting into extra cheese and spread is an explosion of spice and flavor not found in most burger shacks.

In-N-Out has the best burgers like Dunkin' Donuts has the best coffee and doughnuts. It's about comfort food - Angelenos have grown up with it and have a special place in their heart for it, but the bottom line - it ain't all that. Compared to The King and The Clown, it's top-notch, but as others have already alluded to, ther are other chains that leave their burgers in the dust.

As someone from LA, I will tell you In N Out is way overhyped. The only reason I like it better than various other fast food spots is that they offer a grilled cheese option. That being said, Carl's Jr does a pretty good 99 cent meatless burger also.

in-n-out's quality & taste is too good for the price.. which means it's definitely the best burger for the price.. now past that point, it's all up to your personal preference. i don't really like the habit too much.. but now i gotta try hook & umami after reading this

Overrated.  Good burger, not great.  The thin, well-done, griddle-type burgers always will pale in comparison to a thick, juicy, medium-rare or medium burger off a proper grill.  And, if we aren't taking price into account: Fatburger > In-N-Out

As a carnivore and burger lover I still don't understand the In-N-Out obession. They toast the buns so it tastes stale and burnt...I can't eat Burger King or Mc D though either though because the food is of such poor quality...

Do people not realize in and out is all over utah and nevada as well? Every time I read an article they make it sound like it hasn't expanded to other states yet. It clearly has.

Blasphemy! In N Out, for the price, is the best burger and fries. I didn't grow up in California. I don't normally eat any fast food, but there something very satisfying about an In N Out cheeseburger and fries. Nothing will please everyone.

doesn't In-N-Out fry their burgers? That means the meats sits in it's own fat and is served with that fat. Their burgers were way too greasy for me way back wen I ate meat. They are a cult. You can find much better burgers so many other places.... and even better, try a veggie burger!
